    Jars with screw-on lids allow repeated opening and storing of prepared foods. Twist-off lids provide vacuum sealing that preserves homemade goods for months without refrigeration. Glass jars with rubber gaskets and metal clamps offer a traditional and secure method of preservation.

    What is vacuum sealing and why it matters

    A vacuum forms when hot preserves are sealed in a jar and allowed to cool – internal pressure drops and the lid adheres hermetically. This process prevents microbial growth and enables long-term storage of jams, juices and pickled products. Quality jars with proper lids keep preserves fresh for up to a year.

    Glass thickness and thermal resistance

    Thicker glass better withstands temperature shocks during sterilization and pasteurization. Jars intended for hot-fill applications must resist temperatures up to 100°C. Check whether jars are oven-safe or can go into boiling water – cheap jars may crack during the first sterilization cycle.

    Choosing volume based on intended use

    Jars of 50-100ml are perfect for jams and spreads that get consumed quickly after opening. Jars of 370-720ml are standard for preserves and pickles used for family meals. Always choose volume according to household size – once opened, preserves have a limited shelf life.

    How to properly sterilize jars

    Wash jars and lids in warm soapy water, then boil them for 10-15 minutes in a large pot. Alternatively, sterilize in an oven at 120°C for 20 minutes. Never seal cold preserves in hot jars or vice versa – the glass will crack due to sudden temperature change.

    Checking seal integrity

    After cooling, press the center of the lid – if it doesn't give and doesn't click, the vacuum has been established. With metal lids, the center should be slightly concave. Jars that haven't sealed properly must be refrigerated and consumed within a week.
